- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 2 ripe peaches, sliced
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1 tbsp lemon juice
- 2 tsp agar-agar powder
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter until combined. Press into the bottom of a springform pan.
- Beat softened cream cheese with sugar in another bowl until smooth. Add lemon juice and mix well.
- In a small saucepan, combine agar-agar powder with water as per package instructions. Boil while stirring until dissolved.
- Gradually whisk the agar-agar mixture into the cream cheese filling until smooth.
- Pour half of the filling over the crust, layer with peaches and half of the mixed berries. Top with remaining filling.
- Cover and refrigerate for at least 4 hours or overnight until set.
