Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 ripe peaches, sliced
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 tbsp lemon juice
  • 2 tsp agar-agar powder

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter until combined. Press into the bottom of a springform pan.
  2. Beat softened cream cheese with sugar in another bowl until smooth. Add lemon juice and mix well.
  3. In a small saucepan, combine agar-agar powder with water as per package instructions. Boil while stirring until dissolved.
  4. Gradually whisk the agar-agar mixture into the cream cheese filling until smooth.
  5. Pour half of the filling over the crust, layer with peaches and half of the mixed berries. Top with remaining filling.
  6. Cover and refrigerate for at least 4 hours or overnight until set.
