  • 1.5 pounds chuck or sirloin steak, cut into bite-sized pieces
  • 4 medium Yukon Gold or Russet potatoes, sliced (about 2 pounds)
  • 2 cups sharp cheddar cheese, shredded
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 2 cups low-sodium beef broth
  • 1 tablespoon dried thyme

Instructions

  1. Wash, peel, and slice the potatoes into thin rounds.
  2. In a skillet over medium-high heat, sear the steak pieces until browned on all sides.
  3. In the slow cooker, layer half of the potato slices, followed by half of the steak, half of the onions and garlic, a sprinkle of thyme, and half the cheese. Repeat layers with remaining ingredients.
  4. Pour beef broth over the layers until covered but not swimming.
  5. Cook on low for 6 hours or high for 3 hours until potatoes are tender.
