  • 4 cups low-sodium beef broth
  • 5 cloves fresh garlic, minced
  • 2 medium onions, thinly sliced
  • 1 teaspoon dried oregano
  • 6 French rolls
  • Sliced provolone cheese (for serving)

Instructions

  1. Trim excess fat from the beef chuck roast and season generously with salt and pepper.
  2. In a skillet over medium heat, sauté sliced onions in a splash of beef broth until caramelized (about 10 minutes).
  3. Place the seasoned roast in your slow cooker; layer sautéed onions, minced garlic, and oregano on top.
  4. Pour in enough beef broth to cover half of the roast.
  5. Cover and cook on LOW for 8 hours or HIGH for 4 hours until the meat is fork-tender.
  6. Shred the beef using two forks; toast French rolls if desired.
  7. Assemble sandwiches by piling shredded beef onto rolls, topping with provolone cheese, and drizzling with broth before serving.
