  • 1/2 cup brown sugar, packed
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 1 cup coconut cream (or plant-based cream alternative)
  • 1/2 cup brown rice syrup (or maple syrup)
  • Sea salt for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish or line with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.

  4. Mix in vanilla extract until combined; dough should be soft but not sticky.
  5. Spread half of the dough into the prepared dish and bake for 10 minutes.
  6. In a saucepan over medium heat, combine coconut cream and brown rice syrup; stir until bubbling and slightly thickened (about 5 minutes).
  7. Pour caramel over baked crust evenly; crumble remaining dough on top.
  8. Bake for an additional 20 minutes until golden brown. Sprinkle with sea salt while warm; cool completely before cutting.
