Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream the softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in lemon zest and juice.
  4. Gradually add the dry ingredients to the wet mixture, alternating with milk until just combined. Gently fold in raspberries.
  5. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until golden brown. Let cool completely.
  6. For frosting, beat together softened butter, powdered sugar, and lemon juice until fluffy. Frost cooled cupcakes as desired.
