  • 1 cup sweetened condensed coconut milk
  • 2 tbsp lemon zest (from about 2 organic lemons)
  • 3 tbsp freshly squeezed lemon juice
  • 1 cup dairy-free white chocolate chips
  • 1/2 cup coconut flour
  • 1 tsp agar-agar powder

Instructions

  1. In a medium bowl, mix the sweetened condensed coconut milk, lemon zest, and lemon juice until smooth.
  2. Melt the dairy-free white chocolate chips in a microwave-safe bowl in 20-second bursts, stirring until fully melted.
  3. In another bowl, whisk together the coconut flour and agar-agar powder. Gradually mix this dry blend into the wet mixture until well combined.
  4. Refrigerate the mixture for about an hour to firm up.
  5. Scoop tablespoon-sized portions and roll them into balls.
  6. Dip each ball into the melted white chocolate to coat evenly. Place on parchment paper to set.
