  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar (for crust)
  • 1/2 cup unsalted butter, softened
  • 2 cups granulated sugar (for filling)
  • 3 large eggs
  • 1 cup fresh lemon juice (about 3 lemons)
  • Zest from 2 lemons
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, cream together the softened butter and 1/2 cup sugar until smooth. Gradually mix in the flour and baking powder. Press this mixture firmly into the bottom of the baking dish and bake for 15-20 minutes or until golden.
  3. While the crust bakes, whisk together the eggs, remaining sugar, lemon juice, lemon zest, and baking powder until smooth.
  4. Pour the lemon filling over the baked crust and return to oven for another 20-25 minutes until set in the center.
  5. Let cool completely before slicing into squares and dusting with powdered sugar.
