- Zest from 2 lemons
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a bowl, cream together the softened butter and 1/2 cup sugar until smooth. Gradually mix in the flour and baking powder. Press this mixture firmly into the bottom of the baking dish and bake for 15-20 minutes or until golden.
- While the crust bakes, whisk together the eggs, remaining sugar, lemon juice, lemon zest, and baking powder until smooth.
- Pour the lemon filling over the baked crust and return to oven for another 20-25 minutes until set in the center.
- Let cool completely before slicing into squares and dusting with powdered sugar.
