  • 2 medium sweet potatoes (about 500g), peeled and diced
  • 1 lb (450g) lean ground beef
  • 3 tbsp olive oil
  • ¼ cup honey
  • 1 tsp chili flakes (adjust to taste)
  • 3 cloves fresh garlic, minced
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional)
  • 1 avocado, sliced (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Toss diced sweet potatoes in 2 tablespoons of olive oil, salt, and pepper. Spread evenly on the baking sheet and roast for 25-30 minutes until fork-tender.
  3. In a skillet over medium-high heat, add remaining olive oil and ground beef seasoned with garlic, salt, and pepper. Cook for about 5-7 minutes until browned.
  4. In a small bowl, mix honey with chili flakes to create the hot honey sauce.
  5. Combine roasted sweet potatoes with cooked beef in the skillet, drizzle hot honey sauce over it all, and gently toss until coated.
  6. Serve in bowls topped with cilantro and avocado if desired.
