  • 1 lb large shrimp, deveined
  • 1 cup long-grain jasmine rice
  • 2 tbsp vegetable oil (canola or avocado)
  • 3 cloves garlic, minced
  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp fresh ginger, grated

Instructions

  1. Rinse rice under cold water until clear; cook according to package instructions.
  2. In a bowl, whisk together soy sauce, honey or maple syrup, ginger, and garlic. Set aside.
  3. Heat vegetable oil in a skillet over medium-high heat. Sauté shrimp until pink (about 3 minutes per side).
  4. Add bell peppers and zucchini; stir-fry for 5 minutes until tender-crisp.
  5. Pour sauce over shrimp and veggies; simmer for an additional few minutes until heated through.
  6. Fluff cooked rice and serve topped with shrimp and veggies along with any extra sauce.
