  • 8 bell peppers
  • 1 lb ground beef
  • 14 oz chickpeas
  • 14.5 oz diced tomatoes
  • 1 cup cooked brown rice
  • 1/3 cup parsley
  • 1 cup crumbled feta cheese
  • 2.5 tsp salt
  • 2.5 tsp garlic powder
  • 2.5 tsp cumin
  • 1.5 tsp coriander
  • 1.5 tsp oregano
  • 1/4 tsp cinnamon
  • 1/8 tsp cayenne pepper

Instructions

  1. Preheat oven to 375°F (190°C). Prepare the bell peppers by cutting off the tops and removing seeds.
  2. In a skillet over medium heat, cook ground beef until browned. Stir in salt, garlic powder, cumin, coriander, oregano, cinnamon, and cayenne pepper.
  3. Add chickpeas and diced tomatoes to the beef mixture; simmer for 10 minutes.
  4. In a bowl, combine the beef mixture with cooked brown rice, parsley, feta cheese, and mint.
  5. Stuff each bell pepper generously with the mixture and place upright in a baking dish.
  6. Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 15 minutes until peppers are tender.
