- 8 bell peppers
- 1 lb ground beef
- 14 oz chickpeas
- 14.5 oz diced tomatoes
- 1 cup cooked brown rice
- 1/3 cup parsley
- 1 cup crumbled feta cheese
- 2.5 tsp salt
- 2.5 tsp garlic powder
- 2.5 tsp cumin
- 1.5 tsp coriander
- 1.5 tsp oregano
- 1/4 tsp cinnamon
- 1/8 tsp cayenne pepper
Instructions
- Preheat oven to 375°F (190°C). Prepare the bell peppers by cutting off the tops and removing seeds.
- In a skillet over medium heat, cook ground beef until browned. Stir in salt, garlic powder, cumin, coriander, oregano, cinnamon, and cayenne pepper.
- Add chickpeas and diced tomatoes to the beef mixture; simmer for 10 minutes.
- In a bowl, combine the beef mixture with cooked brown rice, parsley, feta cheese, and mint.
- Stuff each bell pepper generously with the mixture and place upright in a baking dish.
- Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 15 minutes until peppers are tender.
