  • 2 cups rotini pasta
  • 4 large hard-boiled eggs, chopped
  • 1 cup mayonnaise

Instructions

  1. Boil the rotini pasta in salted water until al dente. Drain and rinse under cold water.
  2. Hard boil the eggs by placing them in cold water, bringing to a boil, covering, then letting sit for 12 minutes before cooling in an ice bath.
  3. Chop the cooled eggs, celery, and green onions finely.
  4. In a large bowl, mix mayonnaise and Dijon mustard; season with salt and pepper.
  5. Combine the pasta, chopped eggs, celery, and green onions with the dressing until evenly coated.
  6. Chill in the refrigerator for at least one hour before serving.
