  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 cup chopped dried dates
  • ½ cup chopped walnuts
  • 1 cup powdered sugar
  • 2 tbsp cooled espresso or strong brewed coffee

Instructions

  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream the butter until fluffy. Add eggs one at a time, mixing well after each addition.
  4. Gradually mix dry ingredients into the wet mixture until just combined. Gently fold in chopped dates and walnuts.
  5. Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  6. While cooling, mix powdered sugar with cooled espresso until smooth. Drizzle over the cooled cake before serving.
