  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup panko breadcrumbs
  • 1/4 cup grated dairy-free parmesan cheese (optional)
  • 1 cup dairy-free yogurt (for the dipping sauce)
  • 1/2 cup grated cucumber (squeezed dry)
  • 1 clove minced garlic
  • 2 tbsp chopped fresh mint
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Cut chicken breasts into strips approximately one inch wide.
  2. In a bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Coat the chicken strips in the marinade and let sit for at least 15 minutes.
  3. Set up a breading station with panko breadcrumbs (and optional parmesan). Dip each marinated strip into the breadcrumbs until fully coated and place on a parchment-lined baking sheet.
  4. Bake for about 20-25 minutes or until golden brown and crispy, flipping halfway through.
  5. While baking, prepare the tzatziki sauce by mixing yogurt, grated cucumber, garlic, mint, salt, and pepper in a bowl until creamy.
  6. Serve hot with tzatziki sauce for dipping.
