  • 1 lb large shrimp, peeled and deveined
  • 8 corn or flour tortillas
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 4 oz canned green chiles
  • 2 cups low-sodium chicken broth
  • 1 tsp onion powder
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C) and gather all ingredients.
  2. In a skillet, heat olive oil over medium heat. Sauté shrimp with garlic powder and onion powder until pink (about 3 minutes). Remove from heat.
  3. In a bowl, combine cream cheese, sour cream, green chiles, half the shredded cheese, and sautéed shrimp; mix well.
  4. Spread a thin layer of chicken broth in a baking dish. Fill each tortilla with the shrimp mixture, roll up tightly, and place seam-side down in the dish.
  5. Whisk any leftover cream cheese with the remaining chicken broth until smooth; pour over enchiladas. Top with remaining shredded cheese.
  6. Cover with foil and bake for 20 minutes; remove foil and bake for an additional 5 minutes until bubbly.
