  • 8 oz cream cheese, softened
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 15×10 inch jelly roll pan with parchment paper and lightly grease it.
  2. In a bowl, whisk together flour, baking powder, cinnamon, and salt until well combined.
  3. In another bowl, beat sugar and eggs until light and fluffy. Gradually stir in grated carrots and optional pecans.
  4. Gently fold in dry ingredients until just combined.
  5. Pour batter into the prepared pan, spreading evenly. Bake for about 15 minutes or until a toothpick comes out clean.
  6. Once baked, let it cool slightly before flipping onto a powdered-sugar-dusted kitchen towel. Roll tightly using the towel and allow it to cool completely.
  7. Whip together cream cheese, powdered sugar, and vanilla until smooth.
  8. Unroll the cooled cake gently, spread the cream cheese filling evenly, then roll back up without the towel. Slice and serve.
