  • 1 ½ cups shredded carrots (about 3 medium carrots)
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix shredded carrots, eggs, vegetable oil, and vanilla extract until combined.
  4. Gradually combine wet mixture with dry ingredients and stir gently until just mixed.
  5. Pour batter into prepared pan and bake for about 25-30 minutes or until golden brown and a toothpick comes out clean.
  6. While cooling on a wire rack, prepare the frosting by beating cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until creamy.
  7. Once cooled completely, frost the bars generously before cutting into squares.
