- 4 cups powdered sugar

Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix shredded carrots, eggs, vegetable oil, and vanilla extract until combined.
- Gradually combine wet mixture with dry ingredients and stir gently until just mixed.
- Pour batter into prepared pan and bake for about 25-30 minutes or until golden brown and a toothpick comes out clean.
- While cooling on a wire rack, prepare the frosting by beating cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until creamy.
