  • ½ cup brown sugar (light or dark)
  • ½ cup vegetable oil (or melted coconut oil)
  • 3 large eggs
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • ½ cup confectioners' sugar (sifted)
  • ¼ cup unsalted butter (softened)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and cinnamon.
  3. In another bowl, mix grated carrots, brown sugar, eggs, vegetable oil, and vanilla until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
