Description

Butter Pecan Cookies are a delightful treat that combines the rich flavor of toasted pecans with a buttery sweetness, creating a cookie that’s both crispy and chewy.

Ingredients

Scale
  • 1 cup unsalted butter (room temperature)
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar (light or dark)
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup toasted pecans (chopped)
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Mix in the vanilla extract until combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
  5. Gently fold in the toasted pecans.
  6. Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about two inches apart.
  7. Bake for 10-12 minutes, until edges are lightly golden but centers remain soft. Allow to cool on wire racks before serving.
