  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 cup bell peppers, diced (mix of red, yellow, green)
  • 2 green onions, sliced thinly
  • 1 small cucumber, diced
  • 2 tbsp olive oil
  • For the Sauce: 1/3 cup mayonnaise
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 1 tbsp honey or agave syrup

Instructions

  1. Prepare your ingredients by chopping chicken into bite-sized pieces. Dice bell peppers and slice cucumbers and green onions.
  2. In a large skillet over medium-high heat, heat olive oil. Add chicken pieces and season with salt and pepper. Cook until golden brown and fully cooked through (6-8 minutes).
  3. In a small bowl, combine mayonnaise, Sriracha sauce, and honey/agave syrup. Mix well; adjust spice level as desired.
  4. Once the chicken is cooked, lower the heat and pour the sauce over it. Stir until each piece is well coated.
  5. Assemble bowls by layering rice or quinoa at the base. Top with saucy chicken and add bell peppers, cucumbers, and green onions.
  6. Serve immediately and enjoy!
