  • 4 skinless salmon fillets (6 oz each)
  • 1 cup ricotta cheese
  • 1 cup asparagus spears (trimmed)
  • 2 tbsp lemon zest
  • 1/4 cup fresh basil leaves (chopped)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste
  • 1 cup vegetable broth

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Blanch asparagus in boiling water for about two minutes, then plunge them into ice water.
  3. In a bowl, mix ricotta cheese, lemon zest, basil, garlic powder, salt, and pepper until smooth.
  4. On each salmon fillet, spread the ricotta mixture and place two or three asparagus spears at one end; roll tightly and secure with toothpicks if needed.
  5. Place rolls seam-side down in the baking dish, drizzle with olive oil, season with salt and pepper, and bake for 20-25 minutes until cooked through.
  6. Meanwhile, combine vegetable broth and lemon juice in a saucepan; simmer until slightly reduced for the sauce.
