- In the same pot, sauté onions, carrots, and garlic until softened (5-7 minutes).
- Deglaze the pot with red apple vinegar, scraping up any browned bits. Simmer briefly (2 minutes).
- Return the beef to the pot; add beef broth and herbs. Ensure one-third of the meat is covered by liquid.
- Cover tightly and braise in a preheated oven at 285°F (140°C) for about 2.5 to 3 hours until fork-tender.
