  • 1 pound boneless skinless chicken thighs or breasts
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 medium carrot, diced
  • 1 cup frozen peas
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese (optional, for creaminess)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Sauté chicken in olive oil until lightly browned; remove from pot.
  2. Sauté onion and garlic until fragrant.
  3. Deglaze pot with broth; add rinsed rice and seasonings.
  4. Pour remaining broth over rice mixture; return chicken to pot.
  5. Pressure cook on high for 8 minutes; allow natural release for 10 minutes.
  6. Stir in carrots and peas; cover for an additional 5 minutes on Keep Warm mode.
  7. Fluff rice with a fork and garnish with parsley before serving.
