  • ½ cup light brown sugar
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • 1 teaspoon kosher salt
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • ⅓ cup Dutch processed cocoa powder
  • 1 cup white chocolate chips

Instructions

  1. In a stand mixer or large bowl, cream together the unsalted butter, white sugar, and light brown sugar until light and fluffy.
  2. Scrape down the sides of the bowl, then add the egg, egg yolk, and vanilla extract; mix until well combined.
  3. With the mixer off, add flour, baking powder, baking soda, kosher salt, and cocoa powder. Mix on low speed until just combined.
  4. Gently fold in white chocolate chips. Chill dough in the refrigerator for 45-60 minutes.
  5. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  6. Scoop about two tablespoons of dough onto lined sheets, leaving space between each cookie.
  7. Bake for 10-11 minutes; if desired, press extra white chocolate chips onto the tops before cooling.
