  • 1/2 cup granulated sugar
  • 1 1/4 cups all-purpose flour
  • 1 can (14 oz) condensed coconut milk
  • 2 tbsp coconut oil
  • 1 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, cream together softened butter and sugar until fluffy. Gradually mix in flour to form a crumbly dough. Press into the bottom of the prepared dish.
  3. Bake for 20-25 minutes or until golden brown. Allow to cool completely.
  4. In a saucepan over medium heat, combine condensed coconut milk and a pinch of salt, stirring until thickened (about 5-7 minutes). Pour over the cooled shortbread base.
  5. Melt dark chocolate chips with coconut oil until smooth and pour over the caramel layer.
