  • 1 and 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 1/3 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar (for filling)
  • 3 large eggs, room temperature
  • 1 tbsp ground cinnamon
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press into the bottom of a greased springform pan and bake for 10 minutes until golden. Allow to cool.
  2. Beat softened cream cheese in a bowl until smooth. Gradually add sour cream and sugar, mixing until well blended. Add eggs one at a time on low speed, then mix in cinnamon.
  3. Pour the filling over the cooled crust and spread evenly. Bake for about 60 minutes until set but slightly jiggly in the center.
  4. Turn off the oven, crack the door open, and let cool for one hour to prevent cracking.
  5. Refrigerate for at least four hours or overnight before serving with optional nuts on top.
