  • 4 medium Yukon gold potatoes (about 2 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 4 tbsp butter
  • 2 tbsp extra virgin olive oil
  • 2 tsp poultry seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare the potatoes by peeling and chopping them into even pieces. Rinse under cold water, then boil in salted water until fork-tender (15-20 minutes).
  2. While the potatoes cook, heat olive oil in a skillet over medium heat. Season chicken with poultry seasoning, then sauté until golden brown on both sides and cooked through (6-7 minutes each side).
  3. Drain the potatoes and return them to the pot. Add butter and half a cup of chicken broth; mash until creamy. Season with salt and pepper.
  4. In the same skillet used for the chicken, add more chicken broth to deglaze; simmer until slightly thickened.
  5. To serve, scoop mashed potatoes into bowls, top with sliced chicken and sauce. Add steamed vegetables or herbs for garnish.
