  • 1 tbsp olive oil
  • 1 onion, sliced
  • 4 carrots, cut into chunks
  • 4 gold potatoes, quartered
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce (ensure it's alcohol-free)
  • Salt and black pepper to taste
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Season the chuck roast generously with salt and pepper on all sides.
  2. In a hot skillet with olive oil, sear the roast for about 2–3 minutes on each side until browned.
  3. Place sliced onion, carrot chunks, and quartered potatoes in the slow cooker.
  4. Add minced garlic, dried thyme, bay leaf, and Worcestershire sauce over the vegetables.
  5. Carefully place the seared roast on top of the vegetables in the slow cooker.
  6. Pour beef broth around the sides of the roast without pouring directly on top.
  7. Cover and cook on low for approximately 8 hours or high for about 4–5 hours until tender.
