  • 3 to 4 pounds boneless beef sirloin roast or beef shoulder
  • 1 teaspoon salt (I use coarse, kosher salt)
  • 1/2 teaspoon black pepper (I use coarsely ground)
  • 1 teaspoon garlic powder
  • 2 tablespoons liquid smoke
  • 1 to 2 cups low-sodium chicken broth
  • 3/4 cup balsamic vinegar
  • 3/4 cup BBQ sauce
  • 1/3 cup honey
  • 2 tablespoons Worcestershire sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Season the beef with salt, pepper, and garlic powder.
  2. For the Instant Pot: Cut beef in half, place in the pot with liquid smoke and broth. Cook on high pressure for 60 minutes.
  3. For the Slow Cooker: Add seasoned beef to the slow cooker with liquid smoke and broth. Cook on low for 8-9 hours.
  4. Prepare the BBQ sauce by simmering all sauce ingredients until thickened.
  5. Shred cooked beef and mix with BBQ sauce before serving on buns.
