Ingredients
- 3 lbs sweet potatoes, peeled and sliced thin
- 1 1/2 cups heavy cream
- 1/2 cup (1 stick) butter
- 5 cloves garlic, finely minced
- 1 tsp cornstarch
- 1 tbsp chopped fresh thyme
- Kosher salt, to taste
- Freshly cracked black pepper, to taste
- 1/3 cup grated parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, whisk together heavy cream and cornstarch until smooth.
- In a small saucepan over medium heat, melt butter and sauté minced garlic until fragrant (about 2 minutes).
- In a baking dish, layer half of the sliced sweet potatoes. Season with salt, pepper, and half of the thyme. Pour half of the cream mixture over this layer.
- Repeat the layering process with the remaining sweet potatoes, seasonings, and cream mixture.
