  • 3 lbs sweet potatoes, peeled and sliced thin
  • 1 1/2 cups heavy cream
  • 1/2 cup (1 stick) butter
  • 5 cloves garlic, finely minced
  • 1 tsp cornstarch
  • 1 tbsp chopped fresh thyme
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 1/3 cup grated parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together heavy cream and cornstarch until smooth.
  3. In a small saucepan over medium heat, melt butter and sauté minced garlic until fragrant (about 2 minutes).
  4. In a baking dish, layer half of the sliced sweet potatoes. Season with salt, pepper, and half of the thyme. Pour half of the cream mixture over this layer.
  5. Repeat the layering process with the remaining sweet potatoes, seasonings, and cream mixture.
  6. Sprinkle grated parmesan cheese on top.
  7. Cover with foil and bake for 30 minutes; remove foil and bake an additional 10 minutes until golden brown.
