Ingredients

Scale
  • 75g kataifi (chopped; gluten-free alternative: crushed rice noodles or cornflakes)
  • 40g plant-based butter
  • 140g pistachio paste (alternatively almond butter)
  • 600g fresh strawberries (thawed if frozen)
  • 300g Nutella (substitute with sugar-free chocolate)

Instructions

  1. Preheat your oven to 180°C (350°F). Toss the chopped kataifi with melted plant-based butter and spread on a baking sheet. Toast for about 5-7 minutes until golden brown.
  2. In a mixing bowl, combine the toasted kataifi with pistachio paste and add a pinch of sea salt.
  3. Wash and hull all strawberries before slicing them as desired.
  4. Melt Nutella in a microwave-safe bowl in short bursts until glossy.
  5. In individual cups or containers, layer sliced strawberries, the kataifi-pistachio mixture, and melted Nutella until cups are filled.
  6. Top each cup with an extra-large strawberry and sprinkle reserved kataifi for texture. Chill for at least two hours before serving.
