  • 1 lb ground beef (80% lean)
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 medium potatoes, cubed
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tsp Italian seasoning
  • Freshly cracked black pepper to taste

Instructions

  1. Prepare your ingredients by chopping all vegetables.
  2. In a bowl, mix ground beef, breadcrumbs, egg, garlic, onion, salt, and pepper until just combined. Form into meatballs.
  3. Heat oil in a pot over medium heat and brown the meatballs for about 5 minutes; transfer to a plate.
  4. In the same pot, sauté carrots and potatoes for 5 minutes; add diced tomatoes and cook for an additional 2 minutes.
  5. Pour in beef broth and stir in Italian seasoning. Return meatballs to the pot, bring to a boil, then simmer uncovered for about 30 minutes.
