  • 14.5 oz canned fire-roasted diced tomatoes (undrained)
  • Fresh cilantro for garnish

Instructions

  1. In a large pot over medium heat, add a drizzle of olive oil. Sauté the onion, garlic, celery, and carrots until softened (about 6 minutes).
  2. Add chorizo chicken sausage to the pot; cook until browned (about 5 minutes), breaking it apart as it cooks.
  3. Stir in the diced potatoes and fire-roasted tomatoes. Pour in enough chicken broth to cover the ingredients by an inch and bring to a gentle boil.
