- 1/2 teaspoon onion powder
- Salt and black pepper (to taste)
- 2 cups chopped romaine or iceberg lettuce
- 1 cup corn (fresh, grilled, or frozen and thawed)
- 1 avocado (sliced (or guacamole))
- 1/2 cup salsa
- Fresh cilantro (chopped)
- Lime wedges
- 1 cup black beans (rinsed and drained)
- 1/3 cup light Greek yogurt
Instructions
- Cook rice according to package instructions. For added flavor, use broth instead of water.
- In a skillet over medium heat, heat olive oil. Add ground turkey and cook for about 5–6 minutes until browned. Stir in spices and simmer for another 8–10 minutes.
