  • 4 cups butternut squash, diced and peeled
  • 2 tbsp canola oil
  • 1 lb ground turkey
  • 1 cup couscous
  • 3 cups swiss chard, finely chopped
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1 tsp lemon pepper seasoning
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Juice from 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine diced butternut squash with canola oil, nutmeg, cinnamon, salt, and black pepper. Spread on a baking sheet and roast for 25–30 minutes until tender.
  3. Pour boiling water over couscous in another bowl; cover and let sit for 5 minutes.
  4. In a skillet over medium heat, add canola oil and minced red onion; sauté until translucent. Add ground turkey and spices; cook until browned.
  5. Stir in chopped swiss chard until wilted. Fluff couscous and mix into the skillet along with roasted butternut squash and lemon juice.
  6. Serve warm as a hearty main course or alongside your favorite sides.
