  • 35 g Dark chocolate (for melting)
  • 35 g Dark chocolate (chopped into small chunks; to mix in)
  • 2 tbsp Coconut oil
  • 180 g 0% Fat Free Greek yogurt
  • 1 Egg
  • 1 pinch Sea salt
  • 50 g Oat flour
  • 20 g Cacao powder
  • 60 ml Skim milk
  • 120 g Granulated stevia
  • 1 tsp Vanilla extract
  • 0.5 tsp Baking powder

Instructions

  1. Preheat oven to 180°C (350°F) and line an 8×6 pan with parchment paper.
  2. Melt dark chocolate and coconut oil together; set aside to cool.
  3. In a mixing bowl, combine oat flour, cacao powder, sea salt, stevia, and baking powder.
  4. In another bowl, whisk Greek yogurt, egg, skim milk, vanilla extract, and melted chocolate until smooth.
  5. Fold wet ingredients into dry until just combined; incorporate chopped dark chocolate.
  6. Pour batter into the prepared pan; bake for 30-35 minutes until mostly clean when tested with a toothpick.
  7. Cool before cutting into squares.
