  • 3 cups fresh cubed pineapple
  • 1 1/2 large green peppers
  • 1 large red onion
  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 4 Tbsp olive oil (divided, plus more for brushing grill)
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves (minced)
  • 1 Tbsp minced ginger
  • 1/2 tsp sesame oil
  • Salt and freshly ground black pepper

Instructions

  1. Prepare the marinade by whisking together all marinade ingredients in a mixing bowl.
  2. Marinate chicken in a resealable bag for at least one hour; reserve some marinade for basting.
  3. Preheat grill to medium heat (about 400°F).
  4. Assemble kebabs by threading chicken and vegetables onto skewers.
  5. Grill kebabs for about 10 minutes, basting with reserved marinade until chicken is fully cooked (internal temp reaches 165°F).
