  • 1 1/2 lbs boneless skinless chicken breast
  • 1 (20 ounce) can pineapple chunks
  • 2 red bell peppers
  • 1 medium red onion
  • 1/4 cup aminos (or soy sauce if you aren't gluten free)
  • 1/4 cup 100% pineapple juice
  • 1 tablespoon honey
  • 1 teaspoon ground ginger
  • 2 cloves garlic minced
  • 2 teaspoons sesame oil
  • 1/2 teaspoon kosher salt
  • 1 teaspoon cornstarch or tapioca flour (reserved until the end)
  • 2 tablespoons fresh parsley, finely chopped
  • 1215 wooden skewers

Instructions

  1. Whisk together marinade ingredients in a bowl. Marinate chicken for at least one hour.
  2. Soak wooden skewers in warm water for 30 minutes.
  3. Assemble kabobs by threading chicken, pineapple, onion, and pepper onto skewers.
  4. Preheat air fryer to 400°F and cook kabobs for 12-15 minutes, turning halfway.
  5. In the meantime, heat the remaining marinade in a saucepan until thickened. Brush over cooked kabobs before serving.
