  • 1 lb large raw shrimp (peeled and deveined)
  • 2 ears fresh corn
  • 15 oz can black beans (rinsed and drained)
  • 1 large avocado (chopped)
  • 1 large tomato (chopped)
  • 68 cups green leaf lettuce
  • 4 oz queso fresco cheese (crumbled)
  • Olive oil
  • Garlic
  • Fresh thyme
  • Ancho chili powder
  • Lime zest

Instructions

  1. Preheat the grill to medium heat and brush the grates with oil.
  2. In a mixing bowl, whisk together olive oil, thyme, ancho chili powder, lime zest, and garlic. Marinate the shrimp in this mixture for at least 30 minutes.
  3. Grill corn for 14-16 minutes until charred; let cool and scrape off kernels.
  4. Increase grill heat to high and cook shrimp skewers for about 1½ minutes on each side until cooked through.
  5. In a large bowl, combine greens, corn kernels, black beans, tomatoes, avocado, queso fresco, and top with grilled shrimp.
