  • 1 1/2 lb Flat Iron Steak
  • 1 tbsp Steak Rub
  • 1/2 cup Cilantro
  • 1/2 cup Flat Leaf Parsley
  • 2 tbsp Garlic
  • 3 tbsp Lemon Juice
  • 2 tsp Red Apple Vinegar
  • 1 tsp Aleppo Pepper Flakes
  • 1 tsp Ground Cumin
  • 1/2 cup Olive Oil

  1. Remove steak from the fridge and let it sit for 30 minutes at room temperature. Rub with steak rub.
  2. Prepare chimichurri by finely chopping cilantro, parsley, and garlic; mix with lemon juice, vinegar, pepper flakes, cumin, and olive oil in a bowl.
  3. Preheat grill to medium-high heat.
  4. Grill steak at an angle for about 6-8 minutes total per side for medium rare. Use a meat thermometer to check doneness.
  5. Let the steak rest for 5 minutes before slicing against the grain.
