Ingredients
- 1 lb ground beef (or ground turkey)
- 2–3 roasted green chiles (Hatch or poblano)
- 2 medium tomatoes (diced)
- 1 large potato (peeled and diced)
- 1 onion (finely chopped)
- 2 cloves garlic (minced)
- Beef broth or water
- 2 tbsp olive oil
- ½ tsp ground cumin
- ½ tsp ground coriander
- ½ tsp dried oregano
- Salt and pepper (to taste)
Instructions
- Prepare the ingredients by chopping the onion, mincing the garlic, dicing the tomatoes and potato, and roasting the green chiles if not already done.
- In a skillet over medium heat, heat olive oil. Sauté onions until translucent; add minced garlic and cook until fragrant.
- Increase heat to medium-high and brown the ground beef.
- Stir in diced tomatoes, potato cubes, chopped green chiles, optional peas, spices, and broth. Mix well.
- Cover and simmer for about 20 minutes until potatoes are tender.
- Adjust seasoning as needed before serving warm as desired.
