  • 1 cup corn kernels
  • 1 teaspoon ground cumin

  • 1 teaspoon paprika
  • salt and pepper to taste
  • 1 cup chopped fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Sauté chopped onion for 3–4 minutes until translucent.
  3. Add minced garlic; cook for another minute until fragrant.
  4. Brown the chicken pieces, seasoning with salt and pepper, for about 5–7 minutes.
  5. Pour in chicken broth; add diced tomatoes, green chilies, corn, cumin, oregano, and paprika. Stir well to combine.
  6. Bring to a boil; reduce heat to low. Cover and simmer for 30 minutes, stirring occasionally until chicken is tender.
  7. Adjust seasoning if necessary and simmer uncovered for an additional 5–10 minutes if desired thickness is preferred.
  8. Serve hot garnished with fresh cilantro and lime wedges.
