Ingredients

  • – 1 lb ground turkey
  • – 1 cup orzo pasta
  • – 1/4 cup fresh parsley, chopped
  • – 1 can (14.5 oz) diced tomatoes
  • – 3 cloves garlic, minced
  • – 1 medium onion, chopped
  • – 1/2 cup crumbled feta cheese
  • – 2 tsp dried oregano
  • – 2 tbsp olive oil
  • – Salt and pepper to taste

Instructions

1. Prepare your ingredients: Chop the onion and mince the garlic.

2. In a large bowl, mix ground turkey, onion, garlic, oregano, salt, pepper, and half of the parsley until well combined. Form into 1-inch meatballs.

3. Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned on all sides (about 5 minutes).

4. Add diced tomatoes (with juice) and orzo to the skillet; stir to combine.

5. Pour in enough chicken broth or water to cover by about an inch. Bring to a boil, then reduce heat and simmer for about 10 minutes until orzo is tender.

6. Serve garnished with crumbled feta cheese and remaining parsley.
