  • 1 lb boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 chopped onion
  • 2 cloves minced garlic
  • 1 cup orzo pasta (or rice)
  • Juice and zest of 2 large lemons
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, add chicken breasts and cover with chicken broth. Bring to a gentle boil.
  2. Reduce heat and simmer until chicken is cooked through (15-20 minutes). Remove chicken from the pot to cool.
  3. In another pot, heat olive oil over medium heat and sauté onion, carrots, and celery until softened (5-7 minutes).
  4. Stir in minced garlic and sauté for an additional minute.
  5. Shred the cooled chicken and add it back into the pot with the sautéed vegetables.
  6. Pour in orzo pasta along with additional broth if needed. Add lemon juice, zest, oregano, thyme, salt, and pepper.
  7. Simmer for about 10-12 minutes until pasta is cooked through. Serve hot garnished with fresh parsley.
