  • 1.5 lbs boneless, skinless chicken breasts
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 14.5 oz can diced tomatoes
  • 10 oz package frozen chopped spinach
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • ½ cup Kalamata olives
  • ½ cup crumbled feta cheese
  • Juice of 2 tbsp lemon

Instructions

  1. Pat chicken pieces dry and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat; cook chicken until golden brown (5–7 minutes per side). Remove and set aside.
  3. In the same skillet, sauté chopped onion until softened (about 5 minutes). Add minced garlic and chopped peppers; cook until tender-crisp (another 5 minutes).
  4. Stir in diced tomatoes and spinach; mix well.
  5. Add orzo, chicken broth, oregano, and basil to the skillet. Bring to a boil, then reduce heat to low and cover; simmer for about 15–20 minutes until orzo is cooked through.
  6. Return cooked chicken to skillet along with olives and lemon juice; heat through for a couple of minutes.
  7. Serve garnished with crumbled feta cheese and fresh parsley.
