  • ½ cup sweet gherkins, diced
  • ¾ cup red bell pepper, diced
  • ⅓ cup celery, sliced
  • ⅓ cup red onion, diced
  • 2 large hard-boiled eggs, diced
  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 2 Tbsp sweet pickle juice
  • 1 Tbsp red apple vinegar
  • 1 Tbsp sugar
  • 2 tsp Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Cook macaroni in salted water until al dente; rinse under cold water and toss with olive oil.
  2. In a large bowl, combine cooked macaroni with sweet gherkins, red bell pepper, celery, red onion, and hard-boiled eggs.
  3. In a separate bowl, whisk together mayonnaise, sour cream, pickle juice, vinegar, sugar, Dijon mustard, salt, black pepper, garlic powder, and crushed red pepper until smooth.
  4. Pour dressing over the macaroni mixture; toss gently to coat evenly.
  5. Cover and refrigerate for at least one hour before serving.
