  • 240ml low-sodium chicken broth
  • 5g salt (plus more to taste)
  • 42g unsalted butter (cubed)
  • 5g fresh thyme (chopped)
  • Black pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. Bring chicken broth and salt to a boil in a wide pot.
  2. Add cauliflower florets, reduce heat, cover, and steam for 20 minutes until fork-tender.
  3. Transfer steamed cauliflower to a food processor using a slotted spoon.
  4. In the pot, whisk butter with about 3 tablespoons of hot broth until smooth.
  5. Pour butter mixture over cauliflower in the food processor; add thyme and black pepper.
  6. Blend until completely smooth; adjust consistency with more warm broth if needed.
  7. Serve warm, garnished with fresh parsley.
