- 42g unsalted butter (cubed)

Instructions
- Bring chicken broth and salt to a boil in a wide pot.
- Add cauliflower florets, reduce heat, cover, and steam for 20 minutes until fork-tender.
- Transfer steamed cauliflower to a food processor using a slotted spoon.
- In the pot, whisk butter with about 3 tablespoons of hot broth until smooth.
- Pour butter mixture over cauliflower in the food processor; add thyme and black pepper.
- Blend until completely smooth; adjust consistency with more warm broth if needed.
