  • 600 g rib-eye steak
  • 300 g cremini mushrooms
  • 1 medium onion
  • 1 Tbsp Dijon mustard
  • 150 ml full-fat sour cream
  • 500 ml low-salt beef broth
  • 2 Tbsp butter
  • 1 Tbsp plain flour
  • 2 Tbsp neutral oil
  • Kosher salt and freshly cracked black pepper to taste

Instructions

  1. Pound rib-eye steak to about ¾ cm thick; slice against the grain into strips. Season with salt and pepper.
  2. Heat neutral oil in a cast iron skillet; sear half of the beef strips until browned, then transfer to a plate. Repeat with remaining beef.
  3. Lower heat, melt butter, add sliced onions, cooking until translucent (about 1 minute). Add mushrooms and cook until golden brown (about 4 minutes).
  4. Sprinkle flour over vegetables; stir for about 1 minute.
  5. Deglaze the pan with half a cup of beef broth; then stir in remaining broth and Dijon mustard. Simmer for about 5 minutes.
  6. Off heat, mix in sour cream until smooth.
  7. Return beef to the skillet; warm through on low heat for about one minute.
  8. Serve over buttered egg noodles or tagliatelle with chopped chives on top.
