Instructions
- Preheat oven to 325°F (160°C).
- Mix gingerbread cookie crumbs, melted butter, and optional brown sugar in a bowl. Press into the bottom of a greased 9×13-inch baking dish.

- Pour cheesecake filling over the crust and bake for about 40 minutes until edges are set but center is slightly jiggly.
