Ingredients
- 2 boneless skinless chicken thighs
- 15g fresh ginger
- 1 red chilli
- 350ml water
- 250g microwave rice
- Fresh coriander and mint for garnish

- Slice remaining garlic, ginger, and chilli while the chicken marinates.

- In the same pan, sauté ginger, garlic, and chilli for about 3 minutes; add curry powder and simmer with water for 5 minutes.
- Prepare garnishes by picking herb leaves and slicing red onion; mix them together.
