  • 4 green or slightly yellow plantains
  • 4 cloves garlic, minced
  • 1 lb medium shrimp, peeled and deveined
  • 23 tbsp olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Peel plantains and cut into 1–2 inch pieces. Boil in salted water until tender (about 10–15 minutes) or fry for extra flavor.
  2. In a mortar and pestle, mash cooked plantains with minced garlic, adding olive oil or butter and seasoning with salt and pepper.
  3. Heat olive oil or butter in a skillet over medium heat. Sauté minced garlic until fragrant, then add shrimp, cooking until pink and opaque (about 3–4 minutes per side).
  4. Mold mofongo onto plates and top with garlic shrimp, drizzling with pan juices. Serve immediately.
